First, let's start of by making Caramelized White Chocolate.
INGREDIENTS:
250g quality white chocolate
INSTRUCTIONS:
Place chocolate into the oven 100°C (212°F) for 10min at a time until it's caramel color.
(Or microwave for 1 min interval until melted, then microwave for 20sec & stir until caramel color)
Now we can start making Chewy Double Chocolate Cookies
INGREDIENTS:
225g unsalted butter (dry)
300g caster sugar
115g brown sugar
x2 large eggs
1 tsp vanilla
90g Dutch process cocoa powder (dry)
300g of plain flour
1 tsp. baking soda (dry)
1/2 tsp. salt (dry)
75g caramelized white chocolate
10g instant coffee
INSTRUCTIONS:
Sieve the dry ingredients
Beat the butter & sugar together (low & medium)
Just & cream it together
Add eggs & vanilla
Beat again until all combined
Add dry ingredients in & fold it in
Roll them into balls 45g per ball
170°C (325°F) to 10 - 11min.
