Fujianese stewed rice 福建鹹飯

Heya, I learnt this recipe from a friend a month ago and have done this recipe 3 times already so i thought I’d introduce it to you guys. It’s so easy and you can increase the portions if you’re meal prepping. It’s quite balanced and super tasty.

It’s so yummy by itself and very easy to change the macros by adding an egg (however prepped) or some blanched veggies on the side.

So let’s do it :3


INGREDIENTS:

  • 1-2 carrots julienned

  • 400 g pork belly or shoulder cut into small cubes

  • 2-3 shallots sliced thinly or buy deep fried shallots

  • 2 cups of white rice (rinsed)

  • 2 green onions cut into small pieces

  • 2.5 tbsp of light soy sauce

  • 1 tbsp of oyster sauce

INSTRUCTIONS:


  1. Turn on medium high heat and add in some olive oil to start.

  2. Add in the pork and let the fat render for 5-10min. Make sure to have the lid near you as a shield coz you might encounter some splattering if your pork has skin. You can cover the pan/wok with the lid before flipping the pork as well.

  3. Once the pork is golden brown on all sides, you can add your soy sauce and carrots to stir fry with the pork.

  4. Once the carrots are coated evenly with the oil from the pork, cover the lid and cook everything for 5 min in medium heat.

  5. Add all the washed rice into the pot/wok and mix thoroughly with other ingredients

  6. Add in the oyster sauce and keep stir frying until all the liquids at the bottom have been absorbed by the rice

  7. Then pour everything into a rice cooker and add enough water to just submerge the rice (if some carrots and meats are on top, it’s fine, just make sure the rice is submerged and not more water), it’s about 1 cup of water.

  8. Click the white rice button on the rice cooker and let it do its thing.

  9. While you’re waiting, add two tbsp of oil into a pan on medium heat and add your shallots and fry them until golden brown and drain them out of the oil, then you have crispy golden shallots. Can also buy them here

  10. Once you hear the happy music of rice being done, you can add your crispy shallots and chopped green onions AND SERVE!

NOTE: if you don't have a rice cooker, can also do it in the same pot that you cooked everything else in: add in the 1 cup of water and bring everything to a boil and turn the stove to low heat to simmer for 30min with the lid on. Again you have to make sure all the rice grains are submerged in the water, otherwise you will end up with rice grains that aren't cooked.
